Naturally Low Acidity

Acidity is one of the key quality indicators in olive oil. The lower the acidity, the less oxidation and degradation the oil has experienced.

Olivar de Quesada takes pride producing the highest quality extra virgin olive oil (EVOO) from the Picual variety, cultivated in the heart of Sierra de Cazorla, Spain. Our oil is renowned for its rich polyphenol content, low acidity, and exceptional flavor profile.

What are Polyphenols?

     Polyphenols are powerful plant compounds with antioxidant, anti-inflammatory, and cellular protective effects. The earlier olives are harvested and the more carefully they’re processed, the higher their polyphenol levels tend to be. That’s why Olivar de Quesada's early-harvest Picual oil consistently ranks among the highest in polyphenols on the market.

     This lab test confirms that the analyzed olive oil contains 565 mg/kg of total polyphenols, which is considered very high and well above average commercial olive oils. This level supports its classification as a polyphenol-rich extra virgin olive oil, and aligns with health claims related to antioxidant and anti-inflammatory benefits. This result validates Olivar de Quesada's use of the term "high in polyphenols" and supports clinical and marketing statements about its superior antioxidant content.
